Fresh Pineapple Festival Salsa
| 3 cups fresh pineapple, chopped | 3 tsp fresh lemon juice |
| 3/4 cup red onion, chopped | 1-3 tsp jalapeno pepper, finely chopped |
| 3/4 cup jicama or water chestnut | 3 tsp fresh jinger, finely miinced |
| 1 cup frozen corn | 3 tbsp fresh mint, chopped |
| 6 tbsp granulated sugar | 3 tbsp cilantro, chopped |
| Fresh Tomato (to taste) | Salt & Pepper (to taste) |
Mix all ingredients well in a glass bowl.
Adjust seasonings to taste.
Refrigerate at least 4 hours before serving.
